Peanut Butter Cookie Dough Bites
(Gluten Free. Vegan. No-Bake)
Ingredients
1/3c gf oats
3T cacao nibs (or mini choc chips)
3T shredded coconut
2T cacao or cocoa powder
1T chopped dried cherries (optional)
1T agave nectar or liquid sweetener equivalent
1/2c peanut butter (sub any raw nut/seed butter of choice) plus extra for stuffing!
Instructions
1. In a large bowl, stir to combine and place in freezer for approx 10 minutes to set and chill.
2. On a piece of parchment paper, divide dough into 10-12 mini cookie sized servings and flatten into a cookie shape. Tip: Wet your fingertips with water to keep dough from sticking.
3. Freeze for another 20-30 minutes.
4. Sandwich 1 teaspoon of peanut butter between 2 cookies and they're ready to eat!
5. To store: keep in freezer in an airtight container for up to 2 weeks!
